The honeydew is produced from insect exudation onto the vegetation. Since the 1990s, the insect known as the Metcalfa pruinosa was imported by ship in France. The developing larvae are easy to spot on the young bramble shoots. During the month of May, they resemble a cotton-like substance as they change into flitting small insects.

Flavor: strong resin flavour.

It can be enjoyed on its own, by the spoonful, on buttered toast, to garnish tea and warm milk, for the more creative chefs amongst you, try it out in sauces for meat or other dishes.
